Mexican Style Chili Beans

Ingredients:

-1 1/2 Lbs Ground Beef
-1 Tbsp Pepper
-1 Tbsp Garlic Powder
-1 Tsp Salt
-1/2 Diced White Onion
-1 Lb Longaniza or Mexican Chorizo
-3 Diced Roma Tomatoes
-2 Tbsp Paprika
-Tbsp Cumin
-5 Cups Cooked Pinto Beans
-4 or 5 Cups Bean cooking liquid
-1/2 Cup Diced Pickled Jalapeños with brine/liquid
-1 Tbsp Chicken or Beef Bouillon
-1/4 Cup Finely Chopped Cilantro
-1 1/2 Cups Tomato Sauce

preparation:

1. Heat a medium pot over medium-high heat.
2. Add ground beef, pepper, garlic powder, salt and stir to combine and cook until browned.
3. Add onion, stir to combine and sauté for 1 minute.
4. Add longaniza or Mexican chorizo to pot, cook the longaniza, stirring and breaking it into chunks until cooked.
5. Add tomatoes and stir to combine. Add paprika, cumin and stir to combine.
6. Add beans, liquid and stir to combine. Add diced jalapeños, chicken bouillon, cilantro, tomato sauce and stir to combine.
7. Bring to a boil, reduce heat to low, cover pot and simmer for 15 minutes or until slightly thick.
